  • 1 cup + 1 tablespoon self raising flour
  • 2 tablespoon cocoa powder
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon cinnamon powder
  • 1/3 cup soft brown sugar
  • 3 tablespoon sunflower or coconut oil
  • 2 tablespoon apple sauce
  • 3/4 cup cold coffee
  • 1 teaspoon vanilla

 

Dairy free Chocolate Frosting

 

  • 150g dairy free spread
  • 1 teaspoon vanilla
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon cinnamon powder
  • 3 tablespoon cocoa
  • 1 1/2 cups sifted icing sugar
  • 1 large piece of parchment paper for rolling cake
  • 1 tablespoon cocoa, extra
  • 1 tablespoon icing sugar, extra
  • Fondant berries and leaves for decorating cake

 

Method: Preheat oven to 180C / 350F. Line a 9” by 9” square pan with baking paper and spray lightly with non stick spray.

Sift together the flour, cocoa, baking powder salt and cinnamon into a medium sized bowl. Stir in the brown sugar.
